I’ve considered myself a night owl since high school.

I scheduled my college courses to start after 11am so that I could have late nights. My first job as a nanny didn’t begin until the afternoon. But for the first time in years, I’ve realized I love the morning. I love our mornings.
Zach and I take it slow.

Our pattern looks something like this: wake up slowly, roll out of bed, enjoy coffee on the porch. Homemade breakfast will usually follow close behind. Some weekdays we miss this ritual, but on the weekends we don’t. If an outsider attempts to disrupt this pattern, I will fuss about it. But if they want to join, they’re welcome.

Health is important to us, and during the week we are pretty strict on what we eat. The weekends are a different story. It’s not easy to eat well when you’re on the go, but also, it’s the best time to indulge.
There’s something about relaxation and indulgence that go hand in hand.

So we try to eat well, and we generally don’t curse (or cuss as my Texan friends would say). Not because we’re weird about it, the words just aren’t at the top of our vocabulary. The few exceptions are when it’s accidental, necessary for expression, and humorous. Other than that though, it’s pretty rare.

Over the months, I’ve noticed there is one delicious easy breakfast that Zach loves more than any other.

It’s cheesy, southern, and easy to make. It’s not groundbreaking. As a matter of fact, you can get one version at most fast food establishments during their breakfast hour.

He began calling it Aly’s Signature Sandwich, which he wittily abbreviated to A.S.S. “Can I have ass for breakfast?” has taken on a completely new meaning. It’s not an uncomfortably forward, sexual suggestion but merely a breakfast order.

Easy Bacon, Egg and Cheese Biscuits (Aly’s Signature Sandwich)

Ingredients:

  • One Bag of Frozen Biscuit Dough
  • American Cheese Slices
  • Eggs
  • Bacon

Preheat the oven to 350 degrees. Bake biscuits for the time directed on the package. Cook bacon in a skillet. After removing bacon, fry eggs one at a time in bacon grease. Place cheese slice on the fried egg to melt it. Cut the biscuit in half, top and bottom, and fill with bacon, egg and cheese. Make plenty for your friends.
