One of the excuses that I hear most often (and that I tell myself all the time) about healthy eating is that it’s hard to do. Enter healthy banana nut muffins. I guess it’s harder to cook something healthy than it is to run by a drive-thru on your way home from work. But if that’s the best excuse you have, then you could always suggest picking up a salad from a deli or some fresh sushi instead of the double cheeseburger.

I guess my point is this… they’re excuses.

I’m not pointing fingers, actually, I’m admitting to everyone that I have a problem making excuses for my poor eating habits. The bottom line is this: with a little preparation, eating healthy can be just as easy as eating whatever’s on the dollar menu.

Meal preparation isn’t hard. It takes planning and a couple of hours, but your body will thank you. Sure, cutting up vegetables for the whole week takes time, but when you’re on the edge of your seat hungry and you need something quick, you’ll thank yourself.

One of my all-time favorite healthy snacks? The Banana Nut Mini Muffin.

Healthy Banana Nut Muffins

Ingredients:

  • 3 Ripe Bananas
  • ½ Cup of Honey
  • 1 Tsp Vanilla Extract
  • 3 Tbsp Olive Oil
  • 1 ½ Cups of Whole Wheat Flour
  • 1 ½ Tsp of Baking Soda
  • ¼ Tsp of Salt
  • ½ Cup Chopped Pecans

Heat the oven to 350 degrees, and oil your muffin (or mini muffin) pan. Mash up the bananas in a large bowl, then add the honey, vanilla, and oil, and mix well. In a separate bowl, combine the flour, baking soda, salt, and pecans. Add the flour mixture to the banana mixture, and mix well. Spoon evenly into a muffin or mini muffin pan.

Bake mini muffins for 15 minutes, and regular sized muffins for 25 minutes. Insert a toothpick into the middle of one of the muffins to check if they’re finished baking. If the toothpick comes out dry, they’re done. Enjoy!
